BEEF
LOMO SALTADO BY EMILIO CHACON
Ingredients Needed:
(2-3#) Skirt Steak or Flank Steak
(4) Large Russet Potatoes
(2) Large Tomatoes
(1) Large Red Onion
Cooked White Rice (2 Cooked Packs)
(1) Not Bad Cook's Chimichurri Sauce
How To Prepare:
Step 1: Season Steak with Salt, Pepper & Garlic Powder
Step 2: Slice Russets into French Fry Size (Thick or Thin)
Step 3: Cut Tomatoes in Half from Top to Bottom
Step 4: Cut Onion into Quarters from Top to Bottom
How To Cook:
Step 5: Add Oil to a pot till boiling HOT to fry your potato slices
Step 6: Add slices into oil, cook till golden brown & crispy.
Step 7: Remove Fries & set to the side in an oven safe pan. Keep oven on low to keep fries warm while we make the rest of the recipe.
Step 8: Heat a Frying Pan or Cast Iron with oil till HOT
Step 9: Once HOT, add steak into pan & cook for about 3-4 minutes per side depending on how raw/cooked you like your steak. Once the steak is cooked, let it rest for 5-10 minutes wrapped in foiled to regain its juices. Once done resting; cut into thin strips for serving.
Step 10: In the same pan, add more oil to cook the sliced tomatoes & sliced onions. Continues to cook them until they char with a nice black blistering edges/sides. It should take about 6-8 minutes of cooking on high heat.
Step 11: Raw Rice: Cook (2) Full cups of rice in a pot of water or rice cooker. Cooked Rice: Warm up rice in a pan or in oven
How To Plate:
Once everything is completed; pull out a large plate to place the finished items on.
Step 12: Pack a medium size portion of rice in a bowl to make a small mound in the center of the plate.
Step 13: Add a large handful of French Fries to the side of the rice.
Step 14: Mix the Steak, Roasted Onions & Tomatoes together.
Step 15: Grab a large portion of the Steak & Veggie Mix & place on top of the rice.
Step 16: Drizzle Not Bad Cookes Chimichurri Sauce on top of Steak.
Final Step: Enjoy & Savor Every Bite!
